ingredients

  • 1/3 cup melted butter
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon lemon, zest
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup plain greek yogurt
  • 1 1/2 cup fresh strawberries

Method

  • Step 1

    Preheat oven to 350ºF degrees.

  • Step 2

    Prepare a loaf pan by greasing it and set aside.

  • Step 3

    In a medium bowl, whisk together melted butter, sugar, eggs and lemon juice.

  • Step 4

    In another bowl mix together the flour, baking powder and salt. Slowly mix together wet and dry ingredients. Add in the Greek yogurt and gently stir until evenly mixed.

  • Step 5

    Dice half the amount of strawberries to fold into the batter with the lemon zest. Cut the remaining strawberries in halves and set aside. (The strawberry halves will be placed on top).

  • Step 6

    Pour into your greased loaf pan and place the strawberry halves in a single layer on top. Bake for 45-50 minutes or until a toothpick comes out clean.

  • Step 7

    Cool in pan to room temperature. Slice and serve.
