ingredients
- 1 can rinsed and drained chickpeas
- 1 small red or brown onion, diced
- 1/2 cup vegan mayonaisse
- 1 large squeezed lemon
- 1 chopped nori sheet
- 1 tbsp fresh or dried dill
- salt and pepper
- 1 sliced tomato
- 1 sliced avocado
- Handful baby spinach leaves
- sprouts
- fresh coriander leaves
- chopped spring onion (green part only)
- 6 loaf gluten-free favourite sandwich bread
Method
Step 1
Mash chickpeas with a fork until it resembles tuna and there are no big lumps.
Step 2
Add remaining ingredients for a salad (onion, vegan mayonnaise, lemon, nori sheet and dill) and stir to combine.
Step 3
Add salt and/or pepper to adjust the taste according to your liking.
Step 4
Spread on a slice of your favourite bread or make a sandwich, using the suggested ingredients. Enjoy cold!
