Recipe Card

ingredients

  • 1 can rinsed and drained chickpeas
  • 1 small red or brown onion, diced
  • 1/2 cup vegan mayonaisse
  • 1 large squeezed lemon
  • 1 chopped nori sheet
  • 1 tbsp fresh or dried dill
  • salt and pepper
  • 1 sliced tomato
  • 1 sliced avocado
  • Handful baby spinach leaves
  • sprouts
  • fresh coriander leaves
  • chopped spring onion (green part only)
  • 6 loaf gluten-free favourite sandwich bread

Method

  • Step 1

    Mash chickpeas with a fork until it resembles tuna and there are no big lumps.

  • Step 2

    Add remaining ingredients for a salad (onion, vegan mayonnaise, lemon, nori sheet and dill) and stir to combine.

  • Step 3

    Add salt and/or pepper to adjust the taste according to your liking.

  • Step 4

    Spread on a slice of your favourite bread or make a sandwich, using the suggested ingredients. Enjoy cold!
