ingredients

For the crust

  • 1 1/2 cup desiccated coconut
  • 1/2 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 2 tbsp maple syrup

For the caramel layer

  • 1/2 coconut milk (only thick part)
  • 1 tsp vanilla extract
  • 1/2 cup maple syrup
  • 1 cup smooth peanut butter
  • 1 cup unsalted peanuts

Method

  • Step 1

    Preheat oven to 180°C/340°F.

  • Step 2

    In a bowl, mix all the ingredients for the base together. They should form a crumbling dough that sticks together when pressed. Press the dough into your bake dish (square or rectangular).

  • Step 3

    Bake for 10 minutes. Remove from the oven and set aside.

  • Step 4

    Meanwhile the base is baking, make the caramel layer. In a small saucepan, combine coconut milk, vanilla extract, maple syrup, and peanut butter. While stirring constantly, bring to boil and cook for 10 minutes. The filling should start thickening up and resemble caramel. Pour the caramel filling over the base in the baking dish and set in a freezer for 10-15 minutes.

  • Step 5

    Cover the caramel layer with the whole unsalted peanuts.

  • Step 6

    In a heatproof bowl, combine dark chocolate with coconut oil. Melt it above the bowl with boiling water while stirring constantly.

  • Step 7

    Remove the baking dish from the freezer and cut it into 12 bars. Remove them from the baking dish and dip them in the melted chocolate.
