ingredients

  • 1 cup desiccated coconut
  • 1 cup almond meal
  • 2 tablespoon chia seeds
  • 1 cup Medjool dates, pitted
  • 1/4 cup coconut oil, melted
  • 5 large ripe avocados
  • 2 limes, zested and juiced
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons agar-agar powder
  • fresh berries, for garnish

Method

  • Step 1

    Start making the crust. Add the coconut, almond meal, chia seeds, dates, coconut oil to a blender or a food processor and blend until you get a crumbling dough that holds together.

  • Step 2

    Transfer the dough to a springform pan and press it into the bottom. Place in the fridge to set while the filling is made.

  • Step 3

    Add the zest and juice of the limes to a blender or a food processor. Add the rest of ingredients except agar-agar powder. Blend everything until very smooth.

  • Step 4

    Transfer the avocado filling to a saucepan. In another pan, mix the agar-agar powder with 3 tablespoons of boiling water until the agar-agar powder is completely dissolved. Pour agar-agar water into your avocado mixture and stir it.

  • Step 5

    Pour the avocado filling into the cheesecake crust.

  • Step 6

    Set in the fridge for at least 1 hour until the cheesecake fully thickens.

  • Step 7

    Decorate with fresh berries. Enjoy!
