ingredients
- 28 ounce ground beef
- 2 ounce shitake mushrooms
- 2 tsp salt
- 2 tsp ground pepper
- 2 ounce onion
- 2 tabelspoons oil
- 4 burger buns
- 2 ounce pickled radish
- 3 ounce fresh arugula
ingredients
Guacamole
- 2 ripe avocadoes
- 1 ounce onion
- 1 ounce tomato
- 1 jalapeno pepper
- 1 clove garlic
- 1 lime
- 1/2 tsp sea salt
Method
Step 1
Combine minced shitake mushrooms and all other ingredients except guacamole, arugula, burger buns, and onions.
Step 2
Separate the beef mixture into 4 equal portions.
Step 3
Form ground been into patties a bit bigger than the size of your buns
Step 4
Season generously with salt and pepper.
Step 5
Heat 1 tablespoon of oil in a heavy-based skillet or BBQ over high heat.
Step 6
Add onion and cook until wilted and caramelized.
Step 7
Add patties and cook for 3 minutes until golden with a great crust.
Step 8
Do not press! Flip carefully, cook for another 3 minutes. Set aside.
Step 9
Meanwhile, toast the cut side of the buns lightly.
Step 10
Combine the guacamole ingredients.
Step 11
To serve: Spread the base of buns with guacamole, pickled radish, burger patty, onions, arugula, and guacamole.
Step 12
Top with the other half of the bun. Serve immediately.
