ingredients
- 3/4 pound Duck breast
- 1/2 pound potatoes
- 2 cups water
- 1 can coconut milk
- 1 tabelspoons Vegetable Oil
- Salt and Pepper to taste
- 1/4 cup purple onion
- 1 stalk Lemongrass
- 1 tsp Cayenne pepper
- 4 cloves Garlic
- 1 piece Ginger
- 2 tabelspoons Ketchup
- 1/2 tabelspoons ground cumin
- 1 tsp ground coriander
- 1/4 tsp ground white pepper
- 3 tabelspoons Fish Sauce
- 1 tsp Sugar
- 2 tabelspoons chili powder
- 1/4 can coconut milk
- 2 tabelspoons Lemon Juice
Method
Step 1
Roughly chop the onions, lemongrass, garlic and ginger.
Step 2
Put all the liquid ingredients and spices in a food processor/blender and process well to create a fragrant paste.
Step 3
In a heavy pan, heat oil and add the duck meat. Sear the sides until brown.
Step 4
Add curry paste and saute for 2 minutes.
Step 5
Simmer duck in the sauce for 30 mins.
Step 6
Add the potatoes and simmer again for 15 mins.
