ingredients

  • 3/4 pound Duck breast
  • 1/2 pound potatoes
  • 2 cups water
  • 1 can coconut milk
  • 1 tabelspoons Vegetable Oil
  • Salt and Pepper to taste
  • 1/4 cup purple onion
  • 1 stalk Lemongrass
  • 1 tsp Cayenne pepper
  • 4 cloves Garlic
  • 1 piece Ginger
  • 2 tabelspoons Ketchup
  • 1/2 tabelspoons ground cumin
  • 1 tsp ground coriander
  • 1/4 tsp ground white pepper
  • 3 tabelspoons Fish Sauce
  • 1 tsp Sugar
  • 2 tabelspoons chili powder
  • 1/4 can coconut milk
  • 2 tabelspoons Lemon Juice

Method

  • Step 1

    Roughly chop the onions, lemongrass, garlic and ginger.

  • Step 2

    Put all the liquid ingredients and spices in a food processor/blender and process well to create a fragrant paste.

  • Step 3

    In a heavy pan, heat oil and add the duck meat. Sear the sides until brown.

  • Step 4

    Add curry paste and saute for 2 minutes.

  • Step 5

    Simmer duck in the sauce for 30 mins.

  • Step 6

    Add the potatoes and simmer again for 15 mins.
