  • 2 1/2 cup Almond flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup powdered sugar

Method

  • Step 1

    Preheat oven to 375 degrees Fahrenheit.

  • Step 2

    Combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a medium bowl.

  • Step 3

    Beat sugar and butter with a mixer on medium-high speed.

  • Step 4

    Then blend in pumpkin, egg, and vanilla until incorporated.

  • Step 5

    Gradually mix in flour and dry ingredients.

  • Step 6

    Scoop dough into one inch balls.

  • Step 7

    Roll in powder sugar

  • Step 8

    Place dough balls on a baking sheet (12 per sheet) and bake for 12 minutes.

  • Step 9

    Cool cookies on a cooling rack.

  • Step 10

    When completely cool, dust with powdered sugar and store cookies in an airtight container.
