- 2 pound chicken breasts
- 9 ounce Provolone cheese
- 1 cup sour cream
- 8 ounce canned diced green chilies
- 2 ounce red bell pepper
- 3 ounce whole corn kernels
- 2 ounce cherry tomatoes
- 1 tsp Salt
- 1 tsp ground black pepper
- 2 tabelspoons butter
- 2 tabelspoons vegetable oil
Method
Step 1
Preheat oven to 400 degrees Fahrenheit.
Step 2
Prepare a 9x13 casserole dish and brush some butter.
Step 3
Cut chicken breasts into bite-size pieces, season with salt and pepper.
Step 4
Heat oil in a large skillet and add the chicken. Cook for 3 minutes until cooked through.
Step 5
Arrange sautéed chicken in a casserole dish.
Step 6
In a separate bowl, mix cheese, sour cream, and canned diced green chilies (with juice).
Step 7
Add chopped red bell pepper and corn to the casserole dish.
