ingredients
- 12 piece smoked sausage
- 1/2 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 2 tabelspoons sugar
- 2 tsp baking powder
- 1 tabelspoons honey
- 1/8 tsp salt
- 1 large egg
- 1 tsp cayenne pepper
- 1/2 cup whole milk
- 3 sprigs rosemary
- 1 tabelspoons chopped sage
- Vegetable oil, for frying
Method
Step 1
Cut each sausage in half.
Step 2
Insert a lollipop stick into the cutoff end of each hot dog.
Step 3
Dry off the hot dogs with paper towels.
Step 4
Finely chop the herbs.
Step 5
Combine and whisk together the cornmeal, flour, sugar, baking powder, herbs, cayenne pepper, and salt.
Step 6
Whisk together the egg, honey, and milk in another bowl.
Step 7
Combine dry and wet ingredients.
Step 8
Heat oil in a heavy-bottomed pot.
Step 9
Dip each corn dog in the batter mixture until it's completely coated.
Step 10
Shake off any excess batter.
Step 11
Fry until golden brown.
Step 12
Transfer to a bowl with a paper towel to draw excess oil.
Step 13
Repeat with the remaining dogs.
Step 14
Serve with your favorite dipping sauce and rosé wine.
