ingredients

  • 4 cup Vegetable Stock
  • 1 thumb-sized ginger
  • 1 fresh chili
  • 1/4 cup Enoki Mushroom
  • 1/4 pound Chicken Breast
  • 1/3 cup Rice Noodles
  • 1 tabelspoons Soy Sauce
  • handful of Coriander
  • 1/4 cup Snow Peas
  • 1/4 cup Shitake Mushroom
  • 1 tabelspoons vegetable Oil
  • 2 tsp Fish Sauce
  • Salt and pepper to taste

Method

  • Step 1

    Thinly slice the ginger

  • Step 2

    Roughly chopped the shitake mushroom.

  • Step 3

    Cut each chicken breast in half.

  • Step 4

    Heat oil and saute the ginger for 2 minutes or until it releases its aroma

  • Step 5

    Add the shitake mushrooms and saute for another 3 minutes.

  • Step 6

    Add the vegetable stock, fish sauce and soy sauce and bring it to a boil.

  • Step 7

    Carefully add the chicken breast and simmer for 20 minutes.

  • Step 8

    Add the rice noodles and cook for another 2 minutes until cooked.

  • Step 9

    Season with salt and pepper and taste.

  • Step 10

    Add the snow peas and enoki mushrooms at the end.

  • Step 11

    Top with fresh cilantro and sliced chili.
