ingredients
- 15 ounce Cod Fillet
- 1 ounce Onions
- 2 clove garlic
- 3 ounce tomatoes
- 1 serrano chili
- 1/4 cup capers
- 1/2 tsp oregano
- 1/4 tsp marjoram
- 1 bay leaf
- 1/4 tsp salt
- 2 tabelspoons cilantro
- 1 tabelspoons lime juice
- 4 wheat tortilla
- 3 tabelspoons Vegetable Oil
- 1 cup fish stock
Method
Step 1
Cut the fillet into bite-sized chunks. Season with salt and pepper.
Step 2
Add oil in a heated pan and stir-fry the fish. Set aside.
Step 3
In the same pan, fry the minced onions and garlic until soft and translucent.
Step 4
Add the tomatoes, fish stock, olives, chilies, oregano, capers, bay leaf, and marjoram.
Step 5
Bring to boil and reduce to simmer for 20 minutes.
Step 6
Season with salt and pepper.
Step 7
Add the stir-fried fish and mix well.
Step 8
Serve with a grilled tortilla, chopped cilantro.
