ingredients
- 10 pound russet potatoes
- 10 tsp salt and pepper
- 8 tabelspoons butter
- 1/2 cup chopped fennel fronds
- 1 tabelspoons Creme Fraiche
- 1 cup heavy whipping cream
- 1/2 cup diced Proscuitto
- 8 ounce panko bread crumbs
- Vegetable oil for frying

Sauce
- 1 cup fresh dill
- 2 eggs
- 1/4 cup garlic powder
- 1/4 cup paprika
- 1/4 cup white wine vinegar
- 1 cup mayonnaise
- 1/8 cup loosely packed fresh dill
- Salt and pepper to taste
Method
Step 1
Peel the potatoes and boil them whole and then mash
Step 2
Add half of the Panko and all other ingredients except eggs and oil. Mix well.
Step 3
Roll two tablespoons into balls.
Step 4
Put eggs in a bowl and beat until yolks and white are combined.
Step 5
Pour remaining bread crumbs onto a plate.
Step 6
Dip each ball into the eggs and then roll through breadcrumbs until coated.
Step 7
Fry at 375 for 3-5 minutes in batches
Step 8
For the sauce: Combine all ingredients well.
