ingredients
- 1 tabelspoons vegetable oil
- 1 ounce onions
- 17 ounce ground pork
- 1 tsp chili powder (Taco Seasoning)
- 1 tsp smoked paprika (Taco Seasoning)
- 1/2 tsp cumin (Taco Seasoning)
- 1 tsp cayenne pepper (Taco Seasoning)
- 1 tsp dried oregano (Taco Seasoning)
- 1 cup green enchilada sauce
- 6 eggs
- 4 cup cooked brown rice
- 8 whole-grain tortillas (10-inch)
- 1 cups shredded cheddar
- 1/2 cup grated Parmesan
- 1 cup beef stock
- Salt and pepper to taste
- 1/2 cup sour cream
Method
Step 1
Add oil in a heated pan and sauté minced onions.
Step 2
Sauté until translucent. Stir in ground pork until brown.
Step 3
Add pinto beans, taco seasoning, enchilada sauce, and stock.
Step 4
Mix and simmer for 10 minutes.
Step 5
Lightly season with salt and pepper.
Step 6
Add parmesan and set aside to cool.
Step 7
In a separate pan, scramble eggs to the desired doneness.
Step 8
Warm tortillas in a sauté.
Step 9
Place cooked rice and egg at the bottom of the tortilla.
Step 10
Top with ground pork and bean mixture.
Step 11
Divide mixture into 8 wraps.
Step 12
Top with cheddar cheese.
Step 13
Fold in sides of the tortilla and wrap completely.

Top with sour cream.
Step 15
Cut in half before eating.
