ingredients
- 1 tabelspoons peppercorns
- 2 tabelspoons whole cloves
- 1 tabelspoons five spice
- 1 pound salt
- 5 gallon water
- 4 tabelspoons smoked paprika
- 1 tabelspoons onion, powder
- 1 tabelspoons dried oregano
- 6 piece dried bay leaves
- 10 pound live crawfish
- 2 pound sweet potatoes
- 2 pound sweet corn
- 2 pound Chorizo
- 2 cup white wine
Method
Step 1
Place peppercorn, cloves, five-spice, paprika in a spice grinder and grind for 15 seconds.
Step 2
Fill a pot with water and add the ground spices, salt, onion powder, oregano, white wine, and bay leaves. Cover and bring to a boil.
Step 3
Rinse the crawfish with cold water and repeat the rinsing process five times.
Step 4
Once the seasoned water comes to boil, add the sweet potatoes, sweet corn, and chorizo. Cover and cook for 15 minutes.
Step 5
Add the crawfish, cover and cook for 3 minutes.
Step 6
Turn off the heat and let it remain covered for another 10 minutes before draining well and serving.
