ingredients

  • 4 cloves garlic
  • 3 tabelspoons soy sauce
  • 2 tabelspoons coconut sugar
  • 3 tabelspoons lemon juice
  • 13 ounce vermicelli noodles
  • 2 tabelspoons toasted sesame oil
  • 1 ounce onion
  • 2 ounce red bell pepper
  • 1 ounce yellow bell pepper
  • 3 ounce snow peas
  • 2 ounce shitake mushrooms
  • 1 ounce green onions
  • 3 tabelspoons vegetable oil
  • 1/4 cup crushed nuts
  • 1 tabelspoons curry powder
  • Salt and pepper to taste

Method

  • Step 1

    Add rice noodles to a large bowl and cover completely with boiling water.

  • Step 2

    Let cook for 5-10 minutes, stirring occasionally to prevent sticking. Drain and set aside.

  • Step 3

    Whisk to combine minced garlic, 3 tablespoons of soy sauce, coconut sugar, and lemon juice in a small bowl. Set aside

  • Step 4

    Heat oil in a large skillet.

  • Step 5

    Add chopped shitake mushrooms.

  • Step 6

    Sauté for 5 minutes.

  • Step 7

    Add chopped onions, snow peas, curry powder, and thin slices of the bell pepper; continue stirring of another 3 minutes.

  • Step 8

    Add the sauce mixture.

  • Step 9

    Keep stirring for another minute.

  • Step 10

    Add vermicelli noodles and mix well.

  • Step 11

    Season with salt and pepper to taste.

  • Step 12

    Add sesame oil, chopped green onion

  • Step 13

    Serve topped with crushed nuts.
