ingredients

  • 1/4 cup raw cashews
  • 1/4 cup water
  • 14 ounce coconut milk
  • 1/4 cup brown sugar
  • 2 tabelspoons arrowroot flour
  • 2 teaspoo vanilla extract
  • 1/2 ounce cacao butter
  • 1 teaspoo salt
  • 1/2 cup white sugar

Method

  • Step 1

    Combine cashews and water into a blender. Blend until combined.

  • Step 2

    Combine cashew mixture, coconut milk, brown sugar, arrowroot flour, vanilla, cacao butter, and salt in a small pot

  • Step 3

    Cook the mixture in medium-high heat.

  • Step 4

    Whisk until well blended for 5 minutes.

  • Step 5

    Remove from heat and pour into the ramekins.

  • Step 6

    Cover and chill in the fridge until set.

  • Step 7

    Sprinkle with white sugar

  • Step 8

    Using a kitchen torch, burn sugar until golden brown and crisp.

  • Step 9

    Serve with your favorite fresh berries or fruit compote.
