ingredients

  • 8 ounce dried fettuccine
  • 5 tabelspoons butter
  • 20 fresh sage leaves
  • 4 tabelspoons beef stock
  • 1/4 cup grated parmesan cheese
  • Salt and pepper

Method

  • Step 1

    Cook pasta according to package.

  • Step 2

    Meanwhile, melt butter in a heavy large skillet over medium-low heat.

  • Step 3

    Add sage leaves and cook until edges curl and butter is dark amber.

  • Step 4

    Transfer sage to paper towels.

  • Step 5

    Add stock to brown butter.

  • Step 6

    Add pasta and 5 tablespoons grated Parmesan cheese to brown butter mixture in skillet.

  • Step 7

    Toss to coat, season with salt and pepper.

  • Step 8

    Garnish with fried sage leaves, and finely grated cheese.
