ingredients
- 16 fresh oysters
- 5 ounce ricotta cheese
- 1/4 cup grated Monterey jack cheese
- 1/4 cup grated cheddar
- 1 teaspoo smoked paprika
- 4 ounce bacon
- 1 ounce chopped spinach
- 2 teaspoo garlic powder
- 1/4 cups grated Parmesan cheese
Method
Step 1
Cut bacon into smaller pieces and cook until crisp. Set aside to cool.
Step 2
Shuck the oysters and leave them in the bottom half of the shell.
Step 3
Preheat the oven to 450 degrees Fahrenheit.
Step 4
Squeeze the chopped spinach to remove excess moisture.
Step 5
In a bowl, combine ricotta, Monterey jack cheese, cheddar, bacon bits, spinach, garlic powder, and smoked paprika.
Step 6
Set the oysters in their shells on the baking sheet.
Step 7
Scoop a dollop of cheese filling and top over the oyster.
Step 8
Sprinkle with parmesan cheese.
