ingredients
- 8 ounce Fettuccine Pasta
- 12 ounce button mushroom
- 6 ounce silken Tofu
- 1 tabelspoons vegetable Oil
- 3 cloves Garlic
- 3 ounce cherry tomatoes
- 5 ounce spinach
- 2 tabelspoons soy sauce
- salt and pepper to taste
Method
Step 1
Cook the pasta as per the directions
Step 2
Mince the garlic, cut the silken tofu into bite-sized pieces, cut the cherry tomatoes into half, chop the button mushrooms
Step 3
Add oil in a hot pan and sear silken tofu until it forms a crust.
Step 4
Add the mushrooms and tomatoes and saute for 2 minutes
Step 5
Add the garlic and saute for another minute.
Step 6
Crank up the heat and add the pasta.
Step 7
Add the spinach, soy sauce, and mix well.
Step 8
Season with salt and pepper and serve immediately,
