@WenJayYing is sharing her mother's traditional Chinese tea egg recipe in honor of Lunar New Year! Wen-Jay says these tea eggs are one of her favorite dishes from childhood, and the eggs are a symbol of wealth and prosperity.

ingredients
- 6 fresh eggs
- 1/3 cup soy sauce
- 4 whole star anise
- 2 bags black tea
- 1/4 orange, peeled
Method
Step 1
Bring a medium pot of water to a boil and gently place eggs in. Cook for 12 minutes, until you've reached a hard boil stage. Once done, place cooked eggs into a bowl filled with cold water.
Step 2
Once eggs have cooled, take them out of the water bath and lightly crack eggshells all over with the back of a spoon. Use your fingers to press on the eggs to deepen the cracks, but don't remove the eggshells.
Step 3
Add 2 cups water, soy sauce, star anise, tea leaves, and orange peels into a medium pot. Add eggs to the pot and gently simmer for ten minutes. Transfer eggs and broth to a container and place in the fridge, making sure the broth completely covers the eggs. Let eggs sit in the broth in the fridge for 24 hours.
Step 4
Remove eggshells from the eggs, being careful to not peel off the egg whites. Enjoy the tea eggs warm or cold!
