ingredients

  • 600 gram Smoked Pork Fillet
  • 5 tablespoons Olive Oil
  • 1 cup Orange Juice
  • 1/4 cup chopped Coriander Leaves
  • 1 a chopped Red chili
  • 1 clove Garlic
  • 1 tabelspoons Sea Salt

Method

  • Step 1

    Preheat the oven to 190°C

  • Step 2

    Trim the pork if necessary. Moisten with olive oil, then sear in a pan over high heat.

  • Step 3

    Transfer to a baking dish large enough to just hold the pork. Mix the remaining ingredients together and pour over the pork.

  • Step 4

    Bake for 15 minutes, or until cooked through but still moist.

  • Step 5

    Serve with the orange salad.
