ingredients
- 250 gram mixed basmati and wild rice
- 600 gram lean pork fille
- 2 tabelspoons olive oil
- 150 millileters cider vinegar
- 1 red onion
- 2 tabelspoons ground black pepper
- 2 tabelspoons chopped parsley
- 75 millileters maple syrup
Method
Step 1
Boil the rice in plenty of water. Once cooked, drain the water and return to the pot. Cover it with a lid to keep it warm. Follow the instructions on the pack.
Step 2
Meanwhile, sprinkle the black pepper and some salt on all sides of the meat—heat 1 tbsp of the oil in a large frying pan. Sear the meat on both sides until it’s browned nicely. Remove the meat from the pan
Step 3
Add the remaining oil and the sliced onion to the pan. Cook for 5 minutes, then add in the vinegar and let the mixture reduce for 1 minute. Stir in the maple syrup, then return the pork to the pan and heat for five minutes until it’s cooked through. Serve the pork and sauce spooned over the rice and scatter parsley over the top.
