ingredients

  • 2 kilogram boneless gammon
  • 2 chopped Onions
  • 3 chopped Carrots
  • 2 chopped Apples
  • 500 millileters Water
  • 500 millileters Apple Juice
  • 4 tablepoons Apricot Jam
  • 50 gram Brown Suger
  • 50 millileters White Vinager
  • 250 millileters Apple Juice

Method

  • Step 1

    Preheat your oven to 160°c

  • Step 2

    Place your gammon on a big roasting tray

  • Step 3

    Next, add the carrots, red onions, apples, apple juice and water. Cover the tray with foil

  • Step 4

    Place the tray in the oven to roast. You can calculate the roasting time at 20 minutes per 500g. We will roast our 2kg gammon for one hour and 20 minutes

  • Step 5

    Once the gammon is cooked, let it rest by taking it out of the oven. Turn up the heat to 200⁰c

  • Step 6

    Now, in a saucepan, combine all the ingredients for the glaze

  • Step 7

    Bring it to a boil, stirring until the sugar dissolves

  • Step 8

    Cut the skin off the gammon

  • Step 9

    Cut a diamond pattern into the fat

  • Step 10

    Pour the glaze over the gammon

  • Step 11

    Place it back in the oven to cook

  • Step 12

    Check on the glaze regularly, as it tends to burn easily

  • Step 13

    When the glaze is dark and sticky, remove the gammon from the oven

  • Step 14

    Slice it, serve it and enjoy
