ingredients

  • 4 cups chopped Tuscan Kale
  • 2 tablespoons fresh Peanuts
  • 1/2 cups sliced sweet peppers
  • 2 tabelspoons fresh peanut butter
  • 1 tabelspoons Tamari or Soy Sauce
  • 1/2 tabelspoons Fish Sauce
  • 1/2 tabelspoons Lime Juice
  • 1/2 tabelspoons rice vinegar
  • 1 teaspoo minced garlic
  • 1 teaspoon minced ginger
  • 1 sachet stevia
  • pinch salt

Method

  • Step 1

    For the dressing, combine all liquid ingredients in a bowl and mix well. Use the stevia sparingly and feel free to omit if you prefer not to sweeten.

  • Step 2

    For the salad, chop veggies as you like them and place them in 2 bowls. Pour on the dressing and mix well.

  • Step 3

    Garnish with peanuts and serve.
