In this crisp and bitey salad, radishes are not to be overlooked. It's a quick and easy side dish that comes together in seconds. The lemon juice lends a tangy note, while the chopped chives add a hint of onion flavor.

ingredients

  • 4 bunches radishes (about 40), cleaned and greens removed
  • 1/4 cup chives, finely chopped
  • 1/4 cup Italian flat-leaf parsley, finely chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon white wine vinegar
  • 1 1/2 teaspoons black sesame seeds, optional
  • Salt, to taste

Method

  • Step 1

    Thinly slice radishes using a mandolin or a very sharp knife.

  • Step 2

    Stack a few radishes on top of each other and cut the slices into thin matchsticks.

  • Step 3

    In a medium bowl, toss julienned radishes with all other ingredients (chives, parsley, olive oil, lemon juice, white wine vinegar, salt to taste, and black sesame seeds if desired).

  • Step 4

    If time allows, let marinate for 10 minutes before serving!
