Olive Oil Peppers and Cheese Sandwiches

ingredients

  • 4 soft white or wheat hamburger buns
  • 4 green bell peppers, seeded and halved
  • 4 slices extra sharp cheddar cheese
  • Extra virgin olive oil
  • Salt & pepper
  • Hard salami slices, optional

Method

  • Step 1

    For olive-oil steamed peppers: Add about ¼ inch of olive oil to the bottom of a large pot. Add green bell pepper halves. They don’t need to be situated in any particular way. Cover pot.

  • Step 2

    Steam peppers in the olive oil for 75-90 minutes or until peppers are soft and army green. Halfway through, use tongs to re-arrange peppers in the pot so the ones on the top are now on the bottom. If pepper skins are browning quickly, turn heat down to low.

  • Step 3

    To assemble sandwiches: open your hamburger buns and add a slice of extra sharp cheddar to each bottom bun. Use tongs to add 1-2 pepper halves to each sandwich, shaking off excess oil as you go. Add salami slice to each sandwich if desired. Sprinkle generously with salt & pepper. Place bun tops on to finish off your sandwich. Enjoy right away while the peppers are warm!
