ingredients

  • 2 15 ounce cans chickpeas, drained
  • 8 ounces precooked beets
  • 1/4 cup tahini paste
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1/4 teaspoon lemon zest, packed
  • 2 large garlic cloves, peeled
  • 2 tablespoons ice cold water
  • 1 1/2 teaspoons white wine vinegar
  • 1/2 teaspoon salt
  • dash hot pepper flakes

Method

  • Step 1

    To a blender, add all ingredients (drained chickpeas, pre-cooked beets, tahini, olive oil, lemon juice and zest, garlic, cold water, vinegar, salt, and hot pepper flakes to taste).

  • Step 2

    Blend for 1-2 minutes until smooth and creamy.
