ingredients
- 1 1/4 cups Gluten-free all-purpose flour ((Try Silver Fork Homemade All-purpose Gluten-Free flour))
- 1 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/3 cup granulated sugar
- 1/4 teaspoons ground nutmeg
- 2 tablespoons unsalted butter (melted)
- 1 large egg (at room temperature)
- 1/2 almond milk (at room temperature)
- 1 teaspoons pure vanilla extract
- 3/4 cup fresh blueberries
- 2 cups powdered sugar
- 1/4 cup almond milk
- 1 teaspoons pure vanilla extract
- Optional: 1-2 teaspoons blueberry jam
- Optional: granulated sugar
Method
Step 1
Preheat your oven to 375°F (190°C) and grease a doughnut pan.
Step 2
In a large bowl, combine the gluten-free flour, baking powder, baking soda, sugar, and nutmeg.
Step 3
In a separate bowl, whisk together the melted butter, egg, almond milk, and vanilla extract until well combined.
Step 4
Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
Step 5
Gently fold in the blueberries.
Step 6
Spoon the batter into the doughnut pan, filling each cavity about 3/4 full.
Step 7
Bake for 12 minutes, or until the doughnuts spring back when lightly pressed.
Step 8
Allow the doughnuts to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
Step 9
For the glaze, whisk together the powdered sugar, almond milk, and vanilla extract until smooth. If using, stir in the blueberry jam.
Step 10
Once the doughnuts are completely cooled, dip the tops of each into the glaze. Return to the wire rack and allow the glaze to set before serving.
