ingredients

  • 2 pounds cubed 1 inch pork tenderloin
  • 2 1/2 teaspoon divided kosher salt
  • 1/2 teapsoons black pepper
  • 2 tabelspoons avocado oil
  • 1 diced yellow onion
  • 3 cloves minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 2 teaspoon chili powder
  • 1/2 teaspoon ground coriander seed
  • 3 tabelspoons chili paste
  • 1/2 14.5 ounce cans fire roasted tomatoes
  • 1 can drained hominy (25 oz)
  • 5 cups chicken broth
  • 2 cups shredded cabbage
  • 8 wedges limes
  • 2 tablespoons chopped cilantro
  • 1 bunch rinsed and thinly sliced radishes
  • 2 stalks diced, to garnish green onion
  • 1 diced, for topping avocado

Method

  • Step 1

    Season pork with 1 tsp kosher salt and 1/2 tsp black pepper.

  • Step 2

    Turn on the sauté function. Heat avocado oil.

  • Step 3

    Add pork and brown, approximately 5-7 minutes on each side.

  • Step 4

    Add onions, sauté for 3 mins.

  • Step 5

    Add garlic, oregano, cumin, chili powder, coriander, chili paste and the remainder 1 1/2 tsp salt. Mix together. Cook for 1 minute.

  • Step 6

    Turn off sauté function. Add tomatoes, broth and hominy.

  • Step 7

    Close the lid. Make sure the steam release is on sealing. Press the manual or pressure cook button and adjust time to 30 minutes on high pressure.

  • Step 8

    While that is cooking prepare your toppings.

  • Step 9

    Allow pressure to release naturally for 15 minutes. Then move the steam release to venting to release the remainder of the pressure.
