  • 125 grams All Purpose Flour
  • 110 grams Light Brown sugar
  • 3/4 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon Cinnamon
  • 120 grams Unsweetened Plain Yogurt ( almond yogurt or any plain yogurt of your choice)
  • 1 Ripe Banana ( mashed)
  • 60 millileters oil
  • 40 grams Chocolate Chips

Streusel Topping

  • 90 grams Butter
  • 145 grams All Purpose Flour
  • 112 grams Light Brown Sugar
  • Salt

Method

  • Step 1

    Prepare Muffin batter: Combine yogurt, mashed banana, oil, and light brown sugar in one bowl and mix until sugar is dissolved.

  • Step 2

    Combine & sift all the dry ingredients in a separate bowl. Mix dry ingredients into liquid ingredients, stir until fully combined. Last Fold in the chocolate chips

  • Step 3

    Prepare Streusel: Melt butter in a bowl, then add brown sugar, all purpose flour and salt. Mix until it is crumbly. Chill this streusel topping until ready to use.

  • Step 4

    Line a muffin tray with cupcake liners, fill each liner with muffin batter until it is 3/4 full & sprinkle thick layer of streusel on top of each muffin. Bake at 370F for 15-17 min approximately.
