ingredients
- 3 garlic cloves, minced
- 1 onion, chopped
- 2 tablespoons fresh oregano, chopped
- 2 teaspoons fresh Thyme, chopped
- salt, to taste
- pepper, to taste
- 2 pounds spinach, chopped
- 1/2 cup Ricotta cheese
- 1 cup Feta cheese
- 1 1/2 cups chopped fresh parsley
- 1 cup chopped chives
- 1 zested lemon
- 2 eggs
- 1 package phyllo dough sheets
Method
Step 1
Preheat oven to 350°F.
Step 2
In a large pot over medium heat, add olive oil, garlic, onion, oregano, and thyme into a large pot. Add salt and pepper to taste. Cook for 5 minutes, then add the spinach.
Step 3
In a large bowl, combine ricotta, feta, parsley, chives, lemon zest, and eggs.
Step 4
Allow your spinach mixture to cool, drain the excess water from it, then combine with the cheese and egg mixture.
Step 5
Lay out the phyllo sheets, stacking four sheets on top of each other. Starting at the bottom, place about a tablespoon of filling. Start to roll up the dough with the filling inside, brushing on butter in between each layer. Once you have the pies all rolled up, bake them for about 20 minutes, until golden brown and crispy.
