ingredients
- 1 cup sliced celery
- 1 cup sliced carrots
- 1 cup diced yellow onion
- 1/2 cup minced parsley
- 2 tablespoons salted butter
- 2 tablespoons avocado oil
- 12 cups vegetable stock
- 2 chicken breast
- 2 tablespoons kosher salt
- 2 teaspoons black pepper
- 3 tablespoons dill
- 2 teaspoons oregano
- 12 oz gluten-free rotini pasta
Method
Step 1
On a large cutting board prep all of your produce; slice your celery, and carrots, dice your yellow onion and mince your parsley.
Step 2
In a large pot on medium heat add your salted butter along with avocado oil.
Step 3
Then sauté your celery, carrots, and onions until the onions are translucent and the celery has softened.
Step 4
Pour in your veggie stock and bring it to a boil.
Step 5
Once boiling add your chicken breast, salt, black pepper, dill, and oregano.
Step 6
Mix to combine.
Step 7
Bring the pot to a simmer and add in your gluten-free rotini pasta, mix, and cover the pot with a lid.
Step 8
Simmer the soup for the next 10-15 minutes until your chicken is fully cooked and your pasta is tender.
Step 9
Take out the chicken breasts then set them on a large plate, and using two forks shred up your chicken and add the shredded chicken back into the soup.
Step 10
Taste and salt if needed.
Step 11
