ingredients
- 320 grams Plant based milk
- 40 grams Pistachio paste/butter 100%
- 120 grams Fine oats
- 1 gram Salt
- 1 gram Vanilla paste/powder
- 10 grams Chia seeds
- 30 grams Maple sirup
- 80 grams Plant based jogurt
- 20 grams Chopped pistachios
- 50 grams Plant based whipped cream
Method
Step 1
In a small blender mix together the plant based milk, pistachio paste/butter until smooth and well combined. 2. In another bowl add all the remaining ingredients ( except for the pistachio whipped cream and the jogurt for topping) and mix in the pistachio milk. Mix everything until evenly combined. Store it in a tupperware in the fridge overnight and serve the next day. Keep in mind that you may have to add a small amount of liquid if you are using thick or larger oats as they absorb more liquid that the fine ones. 3. Top the overnight oats (optional) with Jogurt and lightly whipped pistachio whipped cream as well as crunchy pistachios. 4. For the pistachio whipped cream simply whip plant based whipping cream such as Oatly until slightly firm peaks. Add the pistachio butter and whip until evenly mixed.
