Batter

  • 80 gram White beans (drained and rinsed)
  • 1 Egg
  • 1 Egg whites
  • 1 1/2 tablespoons Defatted coconut flour (you don’t have to use defatted)
  • 9 gram Coconut oil
  • 2 tablespoons Sukrin gold (brown sweetener)
  • 9 gram Fiber syrup (or honey if you don’t have fiber syrup)
  • 1/3 teaspoon Baking powder
  • 1/4 teaspoon Baking soda
  • a pinch of Salt

Vanilla Batter

  • 10 gram Casein vanilla protein powder
  • 1 tbsp Milk (if needed. Casein can make the batter too thick)

Chocolate Batter

  • 7 gram Casein chocolate protein powder
  • 1 tbsp Unsweetened cocoa
  • 1 tbsp Milk (if needed. Sometimes casein can make the batter too thick)

Method

  • Step 1

    Baked in a 14 cm bundt pan (7 cm height). It is a mini Bundt cake pan. Using a different sized pan might lead to adjustments in the recipe.

  • Step 2

    Preheat oven to 165°C (or 330°F) and grease the bundt pan with coconut oil.

  • Step 3

    In a bowl mix all the ingredients before the vanilla batter to a smooth batter with a hand mixer.

  • Step 4

    Transfer half of the batter to another bowl.

  • Step 5

    Add the ingredients for the vanilla flavor in one bowl, and the ingredients for the chocolate flavor in the other.

  • Step 6

    Now, grab the greased bundt pan. Spoon half of the vanilla batter, followed by the chocolate batter and top with the remaining vanilla batter. Bake at 165°C (330°F) for about 20-25 minutes.

  • Step 7

    When the cake is in the oven, start with the chocolate icing. Combine all the ingredients and add more milk if the icing becomes too thick. Taste it before adding to the cake.

  • Step 8

    Let the cake cool in the bundt pan for about 5-10 minutes. After that, take it out from the pan and let it cool completely before adding the icing.
