High Protein Black Bean Brownies With a Salted Caramel Topping

"I am so happy to be able to share this recipe with you. These brownies may be one of my most delicious recipes so you do not want to miss out this one. It's a rich, creamy, fudgy brownie and... it also has black beans in it. However, you do not feel them but they give a good texture and more protein💪🏻 The salted caramel topping also has another special ingredient, namely a protein milkshake from NJIE with a salted caramel flavor (you can use your favorite protein milkshake). When I invited my friends to try these, they did not understand how these brownies could be so yummy when they are made with no added sugar and black beans in it. They really melt in your mouth and were finished in no time. I have to bake them again 😋"

Brownies

  • 100 gram Black beans (Drained and rinsed)
  • 17 gram Unsweetened Cacao
  • 20 gram Chocolate whey protein powder
  • 2 tablespoons Milk of your choice
  • 1/2 Egg
  • 15 gram Coconut oil
  • 1 gram Hazelnut and cocoa spread with no added sugar (or you can use peanut butter)
  • 1 tablespoon Sweetener of your choice (I used eythritol)
  • 10 gram Fiber syrup with honey flavor (If you don’t have it you can use honey instead)
  • a pinch of Salt

Salted Caramel Topping

  • 50 gram Vitafiber powder
  • 20 milliliter Water
  • 160 milliliter Protein milkshake with a salted caramel flavor (mine was from NJIE with no added sugar)

Method

  • Step 1

    Preheat oven to 175°C (350°F)

  • Step 2

    Line a 15x15 cm baking pan with parchment paper.

  • Step 3

    Melt the coconut oil in the microwave on low heat (Just a few seconds. Don’t overheat it)

  • Step 4

    In a bowl, add all the brownie ingredients and use a immersion mixer to make it smooth (Or a food processor).

  • Step 5

    Spread the mixture evenly in your baking pan and bake for around 12-13 minutes. The center should still be a bit liquid.

  • Step 6

    Start with the salted caramel sauce. In a sauce pan, mix vita fiber and water on low temperature (3 out of 9). When you can see it boiling in the corners, it is almost done.

  • Step 7

    Add protein milkshake with a salted caramel flavor (NJIE) and stir around with a spoon. Turn the heat a bit and let it boil on low temperature for about 10-15 minutes until it is a thicker sauce.

  • Step 8

    Spread the mixture over the brownies (let them cool down a bit before), add sea salt on top and let it stand in room temperature or in the refrigerator for 30 minutes.
