ingredients

  • 2 tablespoons divided Vegetable oil
  • 1 Red onion
  • 1 diced Boneless, skinless chicken breast
  • 1 15 ounce can drained Black beans
  • 1 medium diced Tomato
  • 1/2 cup seeds removed and diced Pepperoncini
  • 3 tabelspoons fresh Cilantro
  • 2 tablespoons Cider vinegar
  • 1 teaspoo Salt
  • 1 tabelspoons Green Tabasco
  • torn Lettuce leaves
  • 1 sliced ripe Avocado

Method

  • Step 1

    Heat 1 TB veg oil in a skillet over M heat. Add red onion, and cook 5 minutes or more, until tender. Move to a medium bowl.

  • Step 2

    Add remaining 1TB veg oil to skillet. Add chicken and cook about 5 minutes until cooked through. Move to bowl with onions

  • Step 3

    Combine beans, tomatoes, pepperoncini, cilantro, vinegar, salt, and Tabasco in a large bowl. Add in set aside onions and chicken.

  • Step 4

    Line a serving platter or bowl with torn lettuces. Top with chicken salad mixture. Serve with sliced avocado.
