ingredients

  • 1 pack store bought puff pastry
  • 1 pack of Boursin cheese
  • 1 fresh Heirloom tomato
  • 1 fresh white peach
  • 1 tabelspoon extra virgin olive oil
  • 1 teapsoon salt
  • 1 teaspoons cracked black pepper
  • 3 leaves fresh basil or mint
  • 2 tabelspoon all purpose flour
  • 2 stems fresh green onion

Method

  • Step 1

    Preheat oven to temperature indicated on pasrty pack (preferably high, around 425F)

  • Step 2

    Prepare tomato, peach and green onion by slicing and setting aside

  • Step 3

    On a clean and floured surface, roll the pastry and gently knead/flatten to desired thickness

  • Step 4

    Transfer to parchment paper lined baking tray

  • Step 5

    Spread boursin cheese (or cheese of choice) followed by fresh fuit or vegetables

  • Step 6

    Drizzle some olive oil and sprinkle some salt and pepper

  • Step 7

    Transfer to oven and bake on high and per pack instructions. We notice it takes about 40 mins with the need to cover loosely with foil halfway through to prevent edges from burning
