ingredients

  • 1 1/2 cup all purpose flour
  • 3/4 cups coconut sugar
  • 2 tabelspoons apricot preserves
  • 1/3 cups liquid coconut oil
  • 2/3 cups milk of choice
  • 1 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 2 eggs
  • 1/2 pint heavy whipping cream
  • 1/3 cups confectioners sugar

Method

  • Step 1

    Prepare the cake by mixing the cake wet and dry ingredients separately, then combining and mixing until well combined.

  • Step 2

    Pour cake batter into a greased pan and bake at 350F for 30-35mins. Take a peak at around the 20 min mark and cover with foil if looks like browning much.

  • Step 3

    While the cake bakes, prepare the whipped cream by pouring the heavy cream into a chilled bowl. Sift in the confectioners sugar and beat on high for a few mins until fluffy and thick.

  • Step 4

    Wait for cake to cool down before covering w/ whipped cream.
