ingredients
- 1 cup coconut cream
- 2 tablespoons powdered sugar
- 2 tablespoons cocoa powder
- 1/4 teaspoons peppermint extract
Method
Step 1
Chill your coconut milk or cream in the refrigerator for about 15-20 minutes. use only the thick "milky" part, which will separate from the watery part. You can also use coconut cream and chill for 10-15 minutes. See notes for more detail on the coconut milk.
Step 2
In a stand mixer, whip the coconut milk or cream until stiff peaks begin to form. If you do not have a stand mixer, you can use an electric hand mixer.
Step 3
Add in both sugars, cocoa powder and peppermint extract and continue to whip until well combined, scrapping down sides with a spatula when needed.
