We love pasta and we love one pot recipes, so what's not to love about this One Pot Pasta? Broccoli, spinach, peas, and basil are combined with cream cheese to make a creamy pasta sauce for large pasta shells.

ingredients

  • 400 grams pasta shells
  • 120 grams broccoli, roughly chopped
  • 100 grams frozen peas
  • 50 grams baby spinach
  • 2 large handfuls finely chopped basil
  • 60 grams cream cheese
  • 3 tablespoons green pesto
  • zest & juice of ½ lemon
  • chili flakes
  • pine nuts, to garnish

Method

  • Step 1

    Chuck the pasta into a large saucepan and pour over 1 litre of just boiled water. Use a snug pan that means the pasta is covered in the water so it cooks evenly. Bring to the boil over a high heat. Cover, reduce the heat to medium-low, you want it gently bubbling away and cook for 10 minutes. If you are using the large pasta shells, it might take longer 14-16 minutes, depending on the size of your pan.

  • Step 2

    Add the broccoli, frozen peas and spinach. Cover and cook for 6-8 minutes or until the pasta is cooked and all but a trickle of the liquid has been absorbed.

  • Step 3

    Add the basil, cream cheese, pesto, lemon zest and juice and a huge pinch of salt and pepper. Mix well until wonderfully creamy.

  • Step 4

    Divide between four bowls and serve immediately with extra cheese, and chili flakes and pine nuts if you fancy them
