Gooey Skillet Cookie #vegan

ingredients

  • 100 g vegan butter
  • 150 g plain flour
  • 130 g brown sugar
  • 1 tablespoons ground flax seeds
  • 2 tablespoon water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 150 g chopped vegan dark chocolate

Method

  • Step 1

    Pre-heat oven to 200C/180C fan. Grease 8-inch skillet with vegan butter.

  • Step 2

    First mix the ground flax seeds with water. Set aside for 5-10 minutes.

  • Step 3

    Melt the butter, then combine with vanilla extract and flax egg.

  • Step 4

    Combine all dry ingredients with the wet.

  • Step 5

    Fold in 3/4's of the chocolate.

  • Step 6

    Pour the cookie dough into the skillet and press the remainder of the chocolate on top.

  • Step 7

    Bake for 30-35 minutes.

  • Step 8

    Allow to cool slightly, then top with vegan ice cream. (I used salted caramel)

    Enjoy!
