Roasted chicken is Sunday meal prep at it’s finest! With a little bit of prep and a hot oven, you can get dinner on the table in under an hour. Leftovers can get repurposed for tomorrow or thrown on salads for quick lunches.

Causa Rellena - Peruvian Potato Cakes with Chicken, Avocado and Tomato by @andrealoretdemola

Shred any of the left over chicken from last night’s dinner and use it to transport yourself to Lima, Peru. Causas are cold potato cakes layered with creamy avocado, tomatoes, mayo and a simple chicken salad. If you don’t have leftovers, no worries, swap in canned tuna or peruvian corn.
