ingredients
- 6 tbsp olive oil, good quality
- 2 tbsp lemon juice
- 2 tsp dijon mustard, to taste
- 1 tsp honey, to taste
- salt and pepper, to taste
- 1 tsp oregano
- 2 cloves garlic, grated
- 1 lb orzo pasta, cooked and cooled
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup kalamata olives, halved, to taste
- 3/4 cup english cucmber, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 6 oz feta cheese, crumbled
Method
Step 1
In a mason jar or small mixing bowl, combine your olive oil, lemon juice, dijon, honey, oregano, salt, pepper, and grated garlic. Shake or mix until fully combined.
Step 2
In a large mixing bowl, add in your cooled orzo pasta. Add in the remainder of your ingredients, pour over your dressing, and toss to combine. Serve with crumbled pita chips (optional).
