ingredients
- 1 pound ground beef (can sub sausage or whatever preferred protein)
- 16 ounces cubed Velveeta
- 4 ounces freshly shredded Monterrey jack cheese
- 14 1/2 ounces canned diced tomatoes with green chilis
- 1 tablespoon olive oil (I use Graza Drizzle)
- to taste, optional Tobasco
- to taste salt
- to taste black pepper
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- optional, for garnishing chopped tomatoes
- optional, for garnishing cilantro
Method
Step 1
In a large skillet or saucepan, heat olive oil over medium heat.
Step 2
Add in your beef and break it apart with a wooden spoon or meat masher. Add chili powder, garlic powder, onion powder, and paprika, and cook until no longer pink.
Step 3
Add in your tomatoes (with juices), Velveeta, and Monterrey jack.
Step 4
Reduce the heat to low and cook, stirring occasionally, for about 5-10 minutes, or until the cheese is fully melted. Add in your Tabasco, if using, and stir.
Step 5
Top with extra tomatoes and cilantro, and serve with tortilla chips. Enjoy! (Tip: Serve immediately or keep over low heat to keep warm)
