- 1 1/2 (to 2) pounds mini red potatoes, quartered
- Olive oil, as needed
- 1 teaspoon garlic powder
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1/2 cup freshly grated parmesan cheese, divided
- 2 celery stalks, diced
- 2 tablespoons minced fresh parsley
- 3 green onions, sliced `
- 1 cup Caesar dressing (homemade or store-bought)
- 6 strips of bacon
- Fresh lemon juice, to taste
- Chopped chives, for garnishing
Method
Step 1
Preheat the oven to 425°F.
Step 2
Coat the quartered mini red potatoes in olive oil. Season with garlic powder, salt, and pepper. Arrange the potatoes on a baking sheet and roast for about 30 minutes, or until crispy, stirring halfway through.

While the potatoes are roasting, cook the bacon in a skillet until crispy. Drain on paper towels, crumble, and set aside.
