ingredients

  • 7 ounces dates, pitted
  • 12 1/2 ounces water, boiling
  • 1 teaspoons baking soda
  • 9 ounces vegan butter
  • 5 1/3 ounces Sugar
  • 2 tablespoons chia seeds
  • 6 tablespoons water
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking powder
  • 8 ounces bread flour

Method

  • Step 1

    Preheat the oven to 350ยฐF.

  • Step 2

    Add baking soda to the dates and soak them in boiling water for 20 minutes. Then strain, reserving the water and chop finely.

  • Step 3

    Bloom the chia seeds with water.

  • Step 4

    In the bow of a stand mixer, add in butter and sugar. Using the paddle attachment on the stand mixer, beat until sugar and butter are incorporated and lighter in color, 2-3 minutes.

  • Step 5

    Add the dates and reserved soaking liquid to the butter mixture. Add chia seeds and vanilla extract. Combine together with paddle attachment, 1 minute.

  • Step 6

    In a medium bowl, sift the flour and baking powder and whisk together to combine. Add the dry ingredients to the wet mixture and beat together until uniform, 1-2 minutes.

  • Step 7

    Prepare the baking mold by covering it with butter and sugar. Then, line the mold with parchment paper. Pour the mixture into the mold. Bake for 30-40 minutes.

  • Step 8

    Once ready, take out of the oven, cool down and enjoy!
