ingredients

  • 3 ea Eggs
  • 2 ea English Muffins
  • 20 gram Spinach
  • 100 gram Butter
  • 25 gram White wine vinegar
  • 1 ea Lemon
  • 30 gram Salt
  • 1 ea Shallot
  • 5 ea Bay leaves

Method

  • Step 1

    Quickly saute the spinach in 5 g butter.

  • Step 2

    Fry the English muffins (pre-made from yesterday as per recipe).

  • Step 3

    Prepare the Hollandaise sauce (as per recipe).

  • Step 4

    Poach eggs.

  • Step 5

    Assemble the Florentine eggs in the following order (bottom to top): English muffin, spinach, poached egg, Hollandaise sauce, curled scallions (optional).
