It took me a while to come up with the name for this recipe, because there’s so many amazing ingredients inside: almonds, goji berries, coconut… You might as well call them superfood bars, peanut butter bars or whatever you want basically… that’s not the point! The point is, that they are extremely nutritious, and will fill you up quite quickly, so keep this in mind while considering your intake 😛"

ingredients

  • 1/3 cup coconut oil
  • 1 3/4 ounces dark chocolate, chopped
  • 1/2 cup crunchy peanut butter
  • 1 cup rice puffs
  • 1/2 cup almonds, chopped
  • 1/2 cup goji berries
  • 1/2 cup coconut flakes
  • 3/4 cup almond flour

Method

  • Step 1

    In a small bowl, soak goji berries in boiling hot water until soft, 30 minutes to an hour. Line a sheet tray with parchment paper.

  • Step 2

    Fill a small sauce pan with 2 inches of water and bring to a simmer. Add a large heat proof bowl on top and add in the coconut oil, chocolate and peanut butter, continuously whisking until melted and integrated fully. Remove from the heat.

  • Step 3

    Once the goji berries have plumped up, drain excess water. Then, in a separate bowl mix together the remaining dry ingredients.

  • Step 4

    Add the half of the dry ingredients to the liquid ingredients and mix to combine. Then add the remaining half and stir until fully combined.

  • Step 5

    Pour in the mixture, flatten it with an offset spatula, and put it the tray in the fridge. Cool for at least 1 hour.

  • Step 6

    Take the hardened bar from the tray, remove the parchment paper and cut in bars, or using a cookie cutter, cut into circles. And enjoy your super nutritious vegan bars!
