Vegan Lemon Curd Donuts

ingredients
- 3 1/3 cups flour
- 1 teaspoon active dry yeast
- 1/4 cup sugar
- 3/4 cup plant based milk, lukewarm
- 4 tablespoons vegan butter
- pinch of salt
- lemon curd, for filling
- oil, for frying
- vegan chocolate, for decoration
Method
Step 1
In a small bowl, combine lukewarm plant based milk, vegan butter and active dry yeast. Stir and let sit 10 minutes. Line a baking sheet with parchment paper and dust with flour.
Step 2
In the bowl of a stand mixer fitted with the whisk attachment, whisk flour, salt, sugar. Then pour wet ingredients and stir and knead for about 10 min until soft and smooth dough. Cover and let sit for 1 hour until double size.
Step 3
Punch the dough to deflate and roll out on a floured surface to about 1 inch thick. With a circle cutter, cut out donuts. Place them on the prepared baking sheet. Cover and let sit 30-40 minutes in a warm place.
Step 4
In a deep frying pan, heat oil over medium high heat. Gently place donuts into the hot oil and fry for a few minutes until golden on one side, flip and cook until golden on the other side. Transfer to a paper towel lined tray or plate.
Step 5
In a microwave safe bowl, melt chocolate. Drop one side of donut and coat with chocolate. Place on a rack and let the chocolate set.
Step 6
Fill a piping bag with lemon curd and pipe into the center of each doughnut.
