ingredients

  • 1 pound (500g) purple potatoes
  • 1 cup flour
  • 1 beaten egg
  • 1 cup shiitake mushrooms
  • 2 tablespoons butter
  • 2 cloves of minced garlic
  • Sage leaves
  • 1 teaspoons ground nutmeg
  • Salt
  • Pepper
  • slices of parmesan cheese

Method

  • Step 1

    Peel and boil the potatoes for 20 minutes until soft, then mash them.

  • Step 2

    Add the beaten egg, salt, pepper, and flour to potato mash and knead until a dough is formed. Rest the dough for 15 minutes.

  • Step 3

    Break pieces from the dough and roll out 1 cent diameter pieces. Slice 1" pieces.

  • Step 4

    Roll the pieces gently on the back of a fork for a nice gnocchi shape and texture.

  • Step 5

    Boil gnocchi in salted boiling water for 3 minutes (they will be floating). Catch gnocchi with a strainer and set them aside.

  • Step 6

    In a pan, melt the butter and stir chopped mushrooms, sage, minced garlic, ground nutmeg and a pinch of salt.

  • Step 7

    Add in the gnocchi and stir until they are combined with the sauce and browned.

  • Step 8

    Serve with mushroom-sage butter sauce and parmesan slices.
